Prototyping around alternative proteins including Brazilian tubers, vegetables and greens as well as cyanobacterias and insects. This experimentation involved the development of an indoor biofarm with thousands of high-protein insects (mealworms and cockroaches), an aquaponic food system and the growth of microalgae. The Lab collaborated with the National Institute of Technology, Food Researchers and Creative Residents around the creation of new food techniques and systems particularly for medically restrictive diets.
